Pickled gherkins and baby corn are quietly becoming a standout Indian export category, with gherkin exports hitting a record $307-308 million in FY2025-26. Here is what is driving global demand, and what buyers should know before sourcing.
When international buyers think of India's agri-export strength, rice, spices and pulses usually come to mind first. But one category has quietly built a genuinely strong export record of its own: pickled gherkins, alongside a growing export interest in baby corn. For importers, distributors and private-label buyers looking to diversify a sourcing book beyond the obvious categories, both are worth a closer look.
India is now the world's second-largest gherkin exporter, built on roughly four decades of organised, export-oriented production. According to industry figures reported by FreshPlaza (19 August 2026, citing Pawan Kumar of Vigneshwar Exports), processed gherkin export volumes rose from about 290,000 tonnes in 2024/25 to around 315,000 tonnes in 2025/26, with export value moving from roughly $306 million to about $308 million over the same period. A separate report (CargoNet, June 2026) put FY2025-26 gherkin export revenue at a record $307.61 million, with export volumes up 8% year-on-year even as exporters navigated US tariff pressure.
Production is concentrated across roughly 65,000-75,000 acres, with Karnataka as the largest hub, followed by Tamil Nadu and Andhra Pradesh, and cultivation now expanding into Telangana and Maharashtra. Most processors work on a contract-farming model — growers receive seeds and technical guidance, while processors gain better control over traceability and quality, a structure that also helps keep the supply chain decentralised and more resilient to disruption in any single region.
India currently exports gherkins to more than 40 countries. Europe, the United States and Russia are the largest destinations, with Germany, France, the Netherlands, Belgium, Poland and Spain the key European markets, alongside growing demand from the Middle East, North America, Asia-Pacific and CIS countries. Within the category, the smallest grades — the 0-3 cm and 1-4 cm sizes often sold as premium cornichons — consistently command the highest prices, as buyers prioritise size, crunch and consistency.
Baby corn is a smaller export category than gherkins, but one where Indian processors are actively investing in product development to meet international demand. FreshPlaza reported (17 July 2026) on Mersel Foods' move into commercial-scale vacuum-packed baby corn with extended shelf life designed to preserve texture, colour and flavour — a development the company said international buyers responded well to, alongside its established vacuum-packed sweet corn business, which has grown from 9 containers exported in 2019 to 184 containers in the 2026 season. Europe remains the primary market for these processed corn products, with exporters also expanding into Southeast Asia and the GCC.
For buyers, the appeal of baby corn in a shelf-stable brine format is straightforward: it is easy to stock, easy to private-label, and fits foodservice and retail use cases — from Asian-cuisine ranges to mixed-vegetable and ready-to-eat products — without the cold-chain requirements of fresh produce.
Both categories sit inside the same practical logic: shelf-stable, brine- or vinegar-preserved vegetables that travel well, store easily, and suit private-label and bulk food-service buying. SATA GreenX Global Exim supplies across this category — pickled gherkins in brine, gherkins in vinegar (cornichons), and baby corn in brine — graded by size and packed canned, in drums or in bottles, to match the specification a buyer actually needs rather than a one-size-fits-all pack.
If you're an importer, distributor or private-label buyer evaluating pickled vegetables as part of a diversified sourcing plan — in Europe, the Gulf, Africa or Asia — this is a category worth a direct conversation, not just a catalogue scan.

Pickled Gherkins in Brine are fresh cucumbers preserved in a salt-based brine solution to maintain their characteristic crunch, tangy flavour and freshness. Suitable for food processing, retail, foodservice and bulk export markets, they are available in different sizes, grades and packaging options as per buyer specifications.

Gherkins in Vinegar (Cornichons) are small cucumbers preserved in a vinegar-based pickling solution to deliver a distinctive tangy flavour, crisp texture and refreshing taste. Suitable for retail, foodservice, food processing and bulk export markets, they can be sourced in different sizes, grades and packaging formats as per buyer specifications.

Baby Corn in Brine is prepared from carefully selected young corn cobs preserved in a salt-based brine solution to maintain their characteristic colour, texture and freshness. Suitable for food processing, restaurants, hotels, retail and bulk export markets, it can be supplied in different sizes, grades and packaging formats as per buyer specifications.
